Made in 2 batches
- 3 kg (24 cups) all-purpose flour
- 1 cup (200 g) superfine sugar
- 4 teaspoons salt
- 48 eggs
- 2 gallons (7.5 liters) milk
- 6 sticks (680 g) unsalted butter, melted
- 2 cups (480 ml) water
- 4 tablespoons vanilla extract
Pastry cream[edit | edit source]
Made in 4 batches
- 80 egg yolks
- 2½ gallons (9.5 liters) whole milk
- 2 quarts (1.9 liters) heavy cream
- 1.2 kg (6 cups) sugar
- 4 teaspoons salt
- 6 cups (750 g) cornstarch
- 6 sticks (680 g) unsalted butter
- ½ cup (120 ml) vanilla extract

- 225 g (8 oz) dark chocolate, chopped
Matcha[edit | edit source]
- ¼ cup (25 g) matcha powder
Strawberry[edit | edit source]
- 1 cup (115 g) freeze-dried strawberries
- Red food coloring gel (optional)
