  • 3 kg (24 cups) all-purpose flour
  • 1 cup (200 g) superfine sugar
  • 4 teaspoons salt
  • 48 eggs
  • 2 gallons (7.5 liters) milk
  • 6 sticks (680 g) unsalted butter, melted
  • 2 cups (480 ml) water
  • 4 tablespoons vanilla extract

  • 80 egg yolks
  • 2½ gallons (9.5 liters) whole milk
  • 2 quarts (1.9 liters) heavy cream
  • 1.2 kg (6 cups) sugar
  • 4 teaspoons salt
  • 6 cups (750 g) cornstarch
  • 6 sticks (680 g) unsalted butter
  • ½ cup (120 ml) vanilla extract

  • 225 g (8 oz) dark chocolate, chopped

Matcha[edit | edit source]

  • ¼ cup (25 g) matcha powder

  • 1 cup (115 g) freeze-dried strawberries
  • Red food coloring gel (optional)
